Baby Crawford Peach
This jam is made from a very special type of peach grown exclusively by Andy Mariani. An heirloom peach, the Baby Crawford is rediscovered by Andy in someone's backyard and has since been included into the Ark of Taste for its rich, classic peach flavor.
The jam reflects the flavor of the sweet, supremely peachy peach (can I say that?) but is balanced by just enough acidity to keep it from being cloying. It's cooked with the noyaux (as with all my stone fruit jams) giving a hint of marzipan in the jam and adding to the complexity. The flavor of this jam just gives and gives.
