Quatre Quats

This marmalade is made with four types of kumquats:

• Indio Mandarinquats
• Nippon Mandarinquats
• Variegated Mandarinquats
• Thomasville Citrangequats
• plus a soupçon of Rangpur limes thrown in for good measure.

The flavor is bright, complex, balanced by tiny hint of natural bitterness from the kumquats.
